It is dry aged 14 days to enhance flavor and tenderness,
then frozen in vacuum sealed packages to preserve quality.

Step 2: We will confirm if we still have the cuts you would like to
order and make an appointment for pickup/delivery of your order
(options will be discussed at this time). If you are ordering a half or
whole at this time we will instruct you to mail us a nonrefundable
check to cover the deposit. The balance will be due when you
receive your beef.
